Happy Xmas with Mum´s Christmas Soup

Our first recipe is a Christmas Recipe. This seemed a good idea because as we write we are approaching the festive season. The weather outside is cold and wet and this soup is a perfect recipe for cold wintery days. It is also one of the  most loved dishes for Christmas in my village. 

The base of this delicious soup that feeds 4 people is: a good chicken broth and meat balls
Ingredients:


The Broth
4 ltr water
1 / 2 chicken with giblets
2 hard-boiled eggs
Salt



Meat Balls
1 / 2 kgr ground pork
2 egg whites
1 egg yolk
50 gr pine nuts
¼ kgr breadcrumbs
2 cloves of garlic
salt

The Soup
2  loaf of french bread (stale)
The broth
Meat balls
1 pinch dry mint
saffron


The preparation ....

The Broth
 Add  the chicken and giblets  to salted boiling water. Cook for 1 hour. Leave until cold, then remove the chicken and giglets and shred all the meat and return it to the broth. Slice the hard-boiled eggs thinly and add this as well.

The Meat Balls
Crush the garlic and mix in a bowl all the ingredients: meat, egg whites, yolk, pine nuts, breadcrumbs and season well. Mix all ingredients together and then using your hands mould the mixture into balls the size of small eggs.

The Soup
Cut the bread into thin slices and set aside. Bring the broth gently to the boil with the meat balls and at this stage add the saffron, a pinch of mint and the bread. Let it simmer for about 10 minutes and it is now ready to serve.

Last word: Traditionally this dish is done with  hen, but chicken or turkey will suffice. If you don´t have saffron you can use yellow food colorant. We understand the some people do not like the giblets, but don´t worry!, this dish is delicious with or without them
