San Jacobo is a meat dish made normally with pork meat and cheese, although you can use beef if you prefer this meat. I have used this time pork loin, but in Spain it is very popular eaten with slices of ham.
The Ingredients to feed 4 people:
4 slices of Pork Loin (about a finger thick)
4 slices of your favorite cheese
A bit of finely chopped Jamon Serrano (like Parma Ham) or Bacon
Flour
Breadcrumbs
Egg
Salt
Pepper
Preparation:
Slice the meat through the tickest part and open the meat creating the area to be filled. Season with salt and black pepper. Place some cheese and Jamon Serrano or Bacon and close.
The Batter:
Dip both sides in beaten egg, then roll it on flour. Dip again in beaten egg and finish in breadcrumbs.
The Cooking:
Fry in hot vegetable oil until both sides are golden. When you take it out of the pan place it on kitchen paper to remove the excess fat.
I have served the meat on a bed of homemade tomato sauce. Most of the times is eaten with french fries and some salad or cooked veg.
