Pollo al Ajillo - Chicken with Garlic Sauce

One word: Fabuloso!






Chris and I ate this for lunch today. Easy and quick to prepare and really delicious!

Mum has cooked this meal since always, really!, mostly in summer and when loads of us where around the table. It is a great dish if you have a lot people to cook for, if you are planning a "busy day" and you want to have a stress free lunch or dinner, or if you have been asked to bring something to a party as it is  very nice to eat  when  it isn´t  hot. 


Today we had the chicken  with  a  green leaves salad, but  you can garnish the dish with your favorite salad or french fries. We will post the recipe for Russian Salad, that is mum´s favorite match to this chicken.




The Ingredients for 4 people:

500 gr. chicken in small pieces
table spoon Olive oil
Handful of Parsley
1 Head of Garlic
6-8 Pepercorns
125 ml. (a glass) Vinegar 
Salt
Oil the pan then add the chicken, garlic cloves and salt. Place on a low heat and cover. 


Cook the chicken until golden brown, stiring frequently.


Using a pestle and mortar crush garlic, pepercorns and salt. Then add a handful of chopped parsley and the vinegar.


When the chicken is cooked add the mix and let it all cook together for a few minutes until the juices have thinkened and the vinegar has caramelized. Let it rest in the pan and serve with the juices.


I have used dried parsley today, but it is always better if you use fresh if you can get it.
