This tasty potato salad is the perfect "tapa" and a perfect side dish for cold meats, barbecues, chicken ; you name it!
The translation is : Russian Salad.
No surprise this salad was originated in Russia and brought to Spain by an emigrant that hide there during the spanish civil war, but I can tell you, this salad is as "typical Spanish" as the Paella or potato omelette can be. You will find it in any Tapas Bar and spanish love it. A bit of Ensaladilla and bread sticks, a nice cold beer and some friends to chat with, makes a hot summer day heaven.
So this is how it looks. Here goes my mum´s version of this salad.
The preparation:
Boil the egg and leave it to cool while you peel and cut into small piecesall the veggies. Make them into small bits as you can see in the pictures I posted.
In a big pot bring water to boil and add salt. Put first the potatoes and boil them for 5 minutes on their own. If peas are frozen, add them also at this point. After 5 minutes add the rest of vegetables (french beans, carrots) and cook until potatoes and veg are soft. Then drain them and place them in a large bolw. Add the hard egg cut in small pieces, the olives, the tuna and the mayonaise. You can add a bit of pepper if you like it. Try for salt and if need it add it at this point. Mix all together using a fork.
My addition to my mums recipe is adding a bit of sweet corn and a bit of chopped red pepper at this last moment and I let it cook with the remaining heat.
Remember to leave it to cool a bit before you put it into the fridge. Best to eat on the following day. It is really typical to decorate the top of the salad with slice boiled egg, olives, anchovies, etc.. just anything to make it colourful and atractive.
