Garlic chicken / Pollo al ajillo: a very easy & cheap recipe with very few ingredients but with astonishing flavor

There are many recipes for chicken in the spanish traditional cooking. However, this is probably the one with less ingredients, but one of the best, no doubt! It is cheap, it is easy and it is healthy.

As many of you already know, garlic is a key element in spanish recipes. There is almost no single day in which garlic is used for one dish or another. When you cook it for a long time, it starts to have a sweet flavor, not pungent at all, and combining incredibly good with chicken. I had tons of garlic chicken during my childhood and still I like to prepare it. Therefore, I want to share this recipe with you trying to spread this recipe arround. I hope you can try it out. Ingredients for 4 servings:

-800 gr chicken in pieces
-6-8 garlic cloves (you can add more if you like)
-100 ml white wine
-the juice of half lemon
-salt
-pepper
-3 tablespoons of olive oil

Time: 35-45 min

Instructions:

1- Peel the garlic cloves and reserve
2- Cut the chicken in pieces, remove the excess of fat
3- Season with salt and pepper
4- Heat the olive oil in a large pan at high heat, and fry the chicken pieces until they get a nice golden brown color in all sides of the pieces
5- Lower the heat to medium, add the garlic cloves and toss for a couple of minutes, making sure the garlic doesn't get too much color
6- Add the wine and the juice of half lemon, cover and let it cook for at least 20 minutes or until the meat is tender
7- uncover and cook for 5 more minutes at high heat to avoid some of the liquid to evaporate and allow the sauce to thicken
