For this cake I’ve used an 8 inch silicone mold, the cake is small but enough for 4-6 people.
Chocolate and Marie biscuit cake
Ingredients (8-inch mold) Receta en español aquí
200 g marie biscuit
140 g chocolate
100 g unsalted butter at room temperature
70 g white sugar
3 large eggs
2 teaspoons baking powder
Directions
Prepare all ingredients and preheat oven to 180 ° C (350 ºF).
Grease pan with butter and dust with flour, make sure all areas are covered.
Crush the cookies until they become a kind of flour.
Cut chocolate into small pieces and set aside.
Cream butter and sugar together (whisk butter and sugar with an electronic hand mixer until it is light and fluffy).
Then add the eggs, one by one, mixing them thoroughly into the mixture between each addition.
Next add the crushed cookies and baking powder to the batter.
Finally add the chocolate chunks and mix well with a spatule.
Spoon the batter into the greased mold (only fill the pan ¾) and bake for 25-30 minutes (do not open oven for the first 20 minutes), or until a skewer inserted into the center of the cake comes out clean, without some wet batter or crumbs.
If the skewer does not come out clean and cake top begins to brown you can cover it with aluminum foil to prevent burning.
When is done, set the pan on a wire rack to cool for 10-15 minutes, then invert the cake on a wire rack to cool completely.
To decorate you can sprinkle with powdered sugar and ready, or use some berries or whatever you can think of ... I leave it to your imagination. Enjoy!
