When we think about Spanish sweets and desserts we rarely think at first of coconut. It is true that coconut is not very common in Spanish recipes. Nevertheless, since I have memory, coconut cookies were around. For me they are a classic remembering my childhood, and the recipe couldn't be easier. Remember: sometimes the better experiences come from the easiest recipes. Enjoy!
Ingredients:
-3 cups coconut flour
-1 cup condensed milk
-1 egg
-1 drop almond essence
Directions:
1-Mix all the ingredients in a bowl and set aside for some minutes to let the flavors combine.
2-Preheat the oven at 200ºC / 390ºF. Form small balls or nuts with the help of your hands or a piping bag, and put them on a tray covered with baking paper. Bake for about 20 min or until they are golden brown. Let them cool completely before eating. Store in a metallic can.
