Cucumber & yogurt soup: a refreshing starter for summer


Cucumbers are in season. And now they suddenly grow in the vegetable gardens, it is the time to do something with them. As you probably know, in Spain we consume a lot of Gazpacho, a cold tomato soup (with some cucumber in). But this is not the only option if you want to refresh yourself with a nutritious cold soup. Cucumber & yogurt soup is very easy to prepare. Just make sure it is cold when you serve it and adjust the seasoning according to your taste. I personally like with a good amount of vinegar (I think it combines very good with cucumber). I hope you can try this out. Enjoy and happy summer!



Ingredients for 4 servings:

-2 cucumbers
-250 gr plain unsweetened yogurt
-3 tbsp olive oil
-1 tbsp vinegar
-pepper
-salt

Directions:

1-Peel the cucumbers. Cut them in thick slices. Put them in a recipient with the yoghurt. Add the seasoning according to your taste (increase or decrease the amount of vinegar and oil as you wish). 
2-Blend all the ingredients together. Taste and adjust the seasoning. Chill it in the fridge for at least 1 hour.
