Creamy coffee custard pudding



I love the traditional egg custard pudding. I love coffee in all variants. I love creamy textures. I love the creamy and delicious coffee custard pudding recipe I'm showing you today. It is the perfect dessert after a good meal, with friends or family, if you want to impress everyone with a very simple recipe you can try yourself without taking too many risks. Ingredients for 6 individual puddings:

for the caramel: 
-3 tbsp brown sugar + 2 tbsp water + few drops lemon juice

for the pudding:
-5 eggs
-8 to 10 tbsp brown sugar
-500 ml milk
-200 ml heavy cream
-1 to 3 sachets instant coffee


Directions:

-Preheat the oven at 200ºC/390ºF.

-Prepare the caramel heating in a pot the sugar and water without stirring it. After 3-4 minutes the caramel will be ready. Add some drops of lemon juice, stir and pour in the moulds (just cover the bottom part). Set aside.

-Heat the milk and the heavy cream along with the instant coffee until almost boiling. Turn the heat off and set aside.

-Beat the eggs with the sugar until well combined. Pour in the milk mixture slowly, in batches in order to prevent the egg from cooking. Transfer the mixture to the moulds and fill them completely.

-Put the moulds on a recipient filled with warm water and bake for 20-25 min or until the pudding is completely cooked through (you can check with the tip of a knife, or a wooden stick). Let them cool down before transferring them into the fridge. Chill them completely before consumption. Enjoy!!!
