CHICKPEAS WITH CODFISH STEW



Ingredients for 3-4 servings:

-400 gr canned chickpeas (boiled)
-500 gr fresh or defrosted codfish
-1 onion
-1 garlic clove
-2 bay leaves
-1 tbsp fresh or dry parsley
-pinch of salt
-3 tbsp olive oil
-2 tbsp plain flour
-150 ml white wine
-200 ml warm water




Directions:

-Chop the onion and the garlic.
-Heat the olive oil in a flat pan and sautè the onion at medium heat until translucent.
-Add the garlic and parsley and cook for 2-3 more minutes.
-Place the fish on top of the onion, add the flour, and then the wine and water. Give it careful stir and cook for 12-15 minutes with the lid on at medium heat.
-Drain the chickpeas and add them to the fish. Mix and cook for 5 more minutes.

Enjoy with a fresh glass of white wine.
