Do you probably know Fernando Alonso. He comes from Asturias. But Asturias has got also many other excellent goods, such as great cider, and of course Fabada Asturiana. This is a very traditional stew, with white beans as the main ingredient, and the classic Spanish chorizo and morcilla (black pudding). The stew looks gorgeous, but the recipe is even for beginners. The only thing you need are good white beans, to soak them in cold water overnight (crucial step!!) and to have patience enough for boiling it during 2 to 3 hours. Then, enjoy with family or friends. You can skip the black pudding if you don't find it or like it. And the best tips: be careful with the salt (as the meat is already salty) and the next day tastes even better!
Ingredients for 6-8 people:
-500 gr dry white beans
-2 small morcillas (black pudding)
-2 small chorizos
-200 gr smoked pork belly
-1 onion
-2-3 garlic cloves
-3 tbsp olive oil
-1 tbsp sweet paprika
-1 tsp saffron
-salt
Directions:
1-Soak overnight the beans. The next day, drain and put in a pot covered with cold water. Bring it to a boil and then discard the water draining the beans. Fill the pot again with cold water enough to cover completely the beans and bring it to a boil
2-Peel the onion and garlic cloves. Cut the onion in quarters and add to the pot
3-Add the chorizos and pork belly to the pot.
4-Add the paprika and the olive oil.
5-Once it is boiling, turn down the heat to medium and cook for 2 to 3 hours (it will depend, so after 2 hours, keep checking once in a while if the beans are tender and 20 min before finishing add the morcillas to the stew, and the saffron. Add some salt if needed (always try before adding)
6-Finally, cut the meat into pieces and serve while it is hot. It tastes better the next day (the broth thickens and the flavours increase)
